Nicola's Lavender & Lemon Cookies

Making lavender lemon cookies is one of the easiest ways to experiment with baking with lavender and they taste so delicious that you will want to do more with this versatile herb.


  • 1 stick of unsalted butter at room temperature
  • cup of sugar
  • 1 free range egg, beaten
  • tsp vanilla
  • Grated zest of unwaxed lemon
  • 1 tbsp milk
  • 1 cup of all-purpose flour
  • Pinch of salt
  • tsp baking powder
  • 1/3 cup whole milk
  • tsp dried culinary lavender
  • 3 cups icing sugar
  • Grated zest of unwaxed lemon

Time To Cook

25 minutes


Makes 12 cookies


  • 1.
    Pre-heat your oven to 350 degrees F
  • 2.
    Cream the butter then add the sugar and beat until light and fluffy.
  • 3.
    Add the beaten egg, lemon zest and milk and beat until uniformly mixed.
  • 4.
    In another bowl sift together the flour, salt and baking powder then add to the butter mixture.
  • 5.
    Blend gently until flour is all incorporated.
  • 6.
    Arrange by spoonful on cookie sheets 1 apart.
  • 7.
    Bake for 8 10 minutes until lightly browned.
  • 8.
    For the Frosting:

    Bring milk and lavender just to a boil in a medium saucepan.
  • 10.
    Remove from heat and allow to infuse for 10 minutes.
  • 11.
    Strain and discard lavender.
  • 12.
    Beat in icing sugar and add lemon zest.
  • 13.
    Spread over cookies
  • Finally....
    This frosting can also be used on cupcakes or fairy cakes. Its also good with a tiny bit of freshly ground pink Himalayan salt.
